What a week!

It´s been a powerful week.Literally.Life ´s been so intensive lately,that I´ve got ill,and now the mug with hot tea and packet of tissues are my best friends!I have felt weak since Thursday,but only this morning I woke up with sore throat and runny nose.




But despite of this,I have some great news-I ´ve got a new job,as a waitress for catering company,so
along with babysitting I will be serving guests at fancy parties,pouring sparkling wine in glasses and stretching my legs after every single evening shift ;)
This Friday was my first shift.Catering company I work for,provided party for nerds from ROVIO,  which is a company responsible for Angry Birds.The place was full of stuffed angry birds and bad piggies,every second guy was wearing angry-shirt or hoodie,and me-in black&white running around and filling-up glasses.
 
 




We decided to eat and cook healthy with my boyfriend,so here is something for beginning:berry smoothie made of half banana,100g raspberries&blueberries,coconut milk and orange juice.Taste very fresh thanks to orange juice and have lovely-creamy consistence ;)
I have it almost every morning,when i don´t feel like to eat much.It prepares stomach for the next food and its best start to the day,not mentioning its full of vitamins and antioxidants.

Awesome beef&chicken burger with bacon

After I have tasted the best burger ever at Midhill brgr last weekend,I decided to try-on something greasy myself.With loads of meat of course,and no bread :) Since i couldn´t decide between chicken meet and beef
i took both.And the result was...damn delicious!!You gotta try yourself,its worth of it,I promise ;)

Ingredients:

* minced beef 400g
* minced chicken 400g
* 4 eggs
* cheddar cheese-slices
* 1-2 red onion
* bread crumbs
* 1 fresh chilli
* salt
* black pepper
                               

* red pepper
* bacon slices
* cream 50 ml
* sour cream 1 pc
* garlic dip mix
* lettuce
* green celery
* carrots



Step by step:

1. Prepare two large bowls,one for chicken meat,another one for beef.Add two eggs,
    chopped chilli,bread crumbs,black pepper and very little salt to each of them.Chicken
    will need a bit more bread crumbs.Mix precisely,then heat up oil in a large pan.
    ( I added chopped onion as well,but it´s not a duty )





2. You will need quite much oil,cause we need to fry them quickly from inside and outside.As the oil is hot,
     start to shape your burgers,you can use table spoon,but don´t be afraid to use your hands ;) Place them
     into a hot oil and fry for few minutes.Chickens are gonna be ready very fast,you can cut one piece in a  
     half  to find out if its done.
     ( chicken meat is kind of sticky,so i used bread crumbs to cover it in,it helps! )







3. When your meats are ready,place it on a plate covered with a sheet of kitchen paper.It absorb the remain
    oil-I always use couple of those.Next,prepare the sauce-chop a red onion,heat up other pan using no oil,
    fry the bacon slices and set them aside on a dry plate.On remaining grease from bacon,fry onion adding
    a little bit of sugar-your onion turns into lovely golden color.Pour in cream,add red pepper,salt and let stir
    for a while.






4. And as the last one,we prepare some veggies and dip!So peel the carrots and celery,cut them in nice
    sticks and place in a bowl( I have baked my carrots together with leak in an oven,but it my way how to  
    do it,you may prefer them fresh) For the dip,you mix sour cream and garlic dip mix,very easy ;)

5. I put some lettuce o my plate,then warm beef,cheddar cheese and bacon in the middle,chicken on the
    top and poured-on some creamy sauce-perfection!



      ( This is how we eat it,with fresh lettuce,some carrots,celery and cucumber to dip ;) )

Time for an apple pie !

 One advantage of the autumn is,that there is plenty of apples which need to be used :) And I like!
 apples.Who doesn´t?So after second round of apple jam i made,I decided to bring on something
 else,something yummy.Since the weather is quite lousy these days,it nice to spend some time in
 kitchen ,cooking and baking,and of course,enjoying the results of your work...And yeah,I like the
 rain better from behind the window,with a piece of homemade apple pie in my hand :D    

 Granny´s apple pie-here you go ;)

Ingredients:

-for dough
* 450g flour
* 150g sugar
* 1 tbl spoon of baking powder
* 1 tbl spoon of vanilla sugar
* 250g butter
* 2 eggs

Step by step:

-for the filling
* 2-3kg apples
* 1 tbl spoon of cinnamon
* 1-2 tbl spoons of vanilla sugar
* grated lemon zest


1. First we prepare a dough,whisk eggs and sugar so u get lovely mousse.Mix flour with baking powder
    and add to egg mousse.Shred-in butter(it makes your job much easier) and put everything together using
    your hands(if you didn´t use salty butter,you can add very little salt,so it brings the flavors out) After
    a while,you should get a nice shaped dough,if its sticky,add 1-2 spoons of flour.Then refrigerate for half
    an hour.
    This is how eggs looked when I opened them into the bowl.i just find it awesome :D :D





2. While the dough is in fridge,we prepare the apple pie filling.You need to peel all apples,shred them,
    squeeze out the liquid (not too much,there should stay a bit moisture,otherwise pie is going to be dry,we
    don´t want that) Add vanilla sugar,cinnamon and a lemon zest,mix well.





3. After half an hour in the fridge,cut dough into a half.Place the first piece on a sheet of baking paper and  
    use the rolling pin to shape i into a nice square.Repeat same with another piece of dough.Remember to
    preheat the oven to 220 degrees.





4. Place baking paper with the dough on a square baking pan.Make sure you have covered the edges with   
    dough as well.                                                                                                                                       





5. Cover with apples and put the next dough on.You can make few holes with a fork,so your pie won´t   
    get bubbles ;)                                                                                                                             






6. And now,pie is ready for oven..place it in the middle,and first 5 minutes bake it on 220dgr.Then lower 
    the temperature to 180dgr and let it bake for another 25 minutes.You will know its ready when it gets  
    lovely pink-brown shade and corners are brown.(If 25 minutes was not enough,place your pie closer top  
    of oven and let in for another 5 minutes )    
    
    Let the pie cool down,and cut it in squares.You can spread it with some powdered sugar if you like,

Ma Cuisine

This time,I have decided to try chicken risotto with white wine and parmesan cheese.I remember the recipe from the times when I was working at a restaurant and here I ´ve changed it a bit myself.Its perfect for a special occasion,such as dinner in two or if you have guests ;)

So let´s start with a list of Ingredients:

* 300g round grain rice(Arbolio)
* 500g chicken breasts
* 1 onion
* 100-150g mushrooms/half of zucchini
 (its up to you,which one you prefer)
* 2 tbl. spoons of butter
* 100 ml white wine
* 100 ml cream
* 750 ml chicken broth
* 50g parmesan cheese
* 1 tbl. spoon of basilica
* 1 teaspoon of black pepper
* salt

Step by step:

1. First,we prepare a chicken broth-easy way is to boil water in a kettle and pour in pot,then stir
 in cube of bouillon.Set aside
2. Let melt butter in a smaller pot,then add rice and fry for a few minutes stirring constantly,after rice get
 white,pour-in all wine and let it absorb.Then add small amount of broth so rice is all covered with  liquid.Continue by adding the rest of the broth until rice is ´aldente´(don´t necessary need to use all
 broth)




3. Cut onion into small pieces,fry in a wok pan until gets golden(you can help by adding a teaspoon
 of sugar,onion get lovely consistence)





4.  After onion is ready,stir-in chicken breasts,which you cut before
 into a bigger peaces.





5. Prepare the mushrooms or zucchini,you can cut them into larger pieces,like on the picture:) and add in,
  when chicken is nicely done(don´t worry to try one piece)Season with black pepper and basilica,and be
  careful to not overcook the zucchini(it doesn´t taste good)





6. In the end,low the heat and add the prepared rice-little by little.Maybe you ´ll find out that its not necessary to use all  of it.Stir carefully and pour-in cream so it gets lovely,creamy consistence.Don´t overcook,just make sure that cream get boiled.Then turn-off the heat and sprinkle with parmesan cheese,set aside and cover for  about 2  minutes before serving.Be careful with salt,you won´t need much since broth and parmesan are  both salty ;)


 Ta daaa,its ready!You can sprinkle it with chive or green onion if you like and some more parmesan cheese.

Fall is here

Mornings are colder,evenings are chillier and days shorter.You can feel the change in the air,you can smell the autumn blues.Apples fallen of the tree,leaves gotten a yellow shade,birds said goodbye heading to the warmer place.And for me,there is time to warm up my heart by little something..something sweet and fresh!
So here comes mascarpone-raspberry dessert-easy to make,damn easy to eat couple of those :)

A girl like me..

There are days,when i feel strong,and see the world in beautiful colors.But then there are days when I would rather be alone,days when I feel lost,when I am scared.I have fallen on my ass so many times,and so many times I have got up,and start from the beginning..Then I decided to be strong,to be happy and forgot the things that are keeping me back.I am living a life that I always wished for and making my dreams come true.
If I have a bad day,and my mind is dark,there always comes someone who put a smile upon my face,and remind me that things are not as serious as they seem to be.So take it easy!
